These things are so delicious I could eat the whole batter. And as a bonus, they happen to be raw and vegan (depending on your chocolate). This recipe is modified from my friend Heather. No, they are not meatballs. The picture doesn’t do them justice. Make them — you will thank me!
2/3 cup raw cashews
1/3 cup rolled oats
1 Tbsp agave nectar
1-2 Tbsp maple syrup (or honey), I use 1
1Tbsp vanilla extract
Dash sea salt
1 Tbsp flax seeds (I prefer ground)
1 tsp chia seeds
1 tsp coconut oil
1/3 cup mini dark chocolate morsels
In a Vitamix or food processor, blend the cashews and oats to a fine meal. Add the remaining ingredients except the chocolate. Blend until dough-like consistency. Mix in the chocolate chips. Form into little balls and either refrigerate, freeze or enjoy!
Note the flax, chia and coconut oil are optional but add tons of omega 3s and healthy saturated fats for brain, skin and heart health and overall reduced inflammation.
