Leafy greens like spinach, kale, collards as well green veggies like broccoli and asparagus are filled with folate, the B vitamin needed to prevent neural tube defects during pregnancy. I add avocado (technically a fruit!) for even more folate. While it’s crucial to get this vitamin during pregnancy, it’s even more important to have a good store of it before you get pregnant.
This creamy smoothie provides about a third of your daily needs for folate and 100% of your daily needs for vitamin C.
6-10 leaves kale, depending on how hard core you are
Juice of 1 lemon
1 large banana
1/2 cup water
1/2 cup ice
Put it all in the Vitamix or other blender. Blend until smooth. Serves 2.
